Sheer korma or Sheer khurma is a vermicelli pudding prepared by most of the Muslims all over the world during their popular festive named Ramzan / Ramadan. The traditional Ramzan sweet, Sheer Khurma is very popular and authentic recipe from Mughal cuisines. This recipe carries a sweet traditional taste, easy to make & delicious to eat. Once eaten, all you want is have it again. Then, why don’t you prepare it yourself and serve to your dear ones.

Preparation Time: 10 mins| Cooking Time: 1 hour| Serves ~6

Ingredients

Whole milk: 1 lt

Dry dates: 6-7

Green cardamom (lightly beaten): 3-4  

Sugar: 1/2 cup

Vermicelli (sevaiyan): 1 cup

Ghee: 2 tbsp or clarified butter

A pinch of saffron

Crushed dry fruits (almonds, pistachio and cashew): 1 cup

Method

1. Soak dates in warm water until they become soft to cut.

2. Remove seeds and cut the dates into small pieces.

3. Boil the dates in 1 cup of milk, till the milk gets completely reduced.

4. The dates will absorb all the milk.

5. Boil milk in a thick bottomed pan and keep on low flame for about 40 mins until it is thick enough.
 
6. Keep stirring the milk in between or else it will stick to the bottom of the pan.

7. In a separate pan, add 2 tbsps of ghee, cardamoms and vermicelli.

8. Fry for some time until the vermicelli is light brown.

9. Add the vermicelli to the boiling milk and cook for 10 minutes.

10.  Add sugar and cook for 2-3 minutes until the sugar dissolves.

11.  Add saffron mixed in a tbsp of hot milk to the milk.

12. Add about ¼ cup of dry fruits and half the dates.

13. Cook for 2-3 minutes

14. Remove and garnish with remaining dry fruits and dates.

15. Serve hot.
