Get experimental this summer with Lychee Kheer

Are you a kind of a person who loves to experiment in the kitchen? If yes, then you will love our today's recipe — lychee kheer or lychee payasam. While sticking to the tried and tested might yield us fail-proof results in the kitchen, experimenting with your cooking techniques and ingredients once in a while just helps you push that envelop and take your cooking skills to a whole new level.

Our today's recipe is an attempt at that. We took the universal favorite Indian dessert kheer or payasam and cooked it with fresh lychees and voila, we got a dish that wasn't just super tasty, but super easy to make too. Try it out.

Ingredients:

  • Lychee - 15 (peeled, seeds discarded and the fruit cut into cubes)

  • Basmati rice - 1/2 - 3/4 cup

  • Whole milk- 3 cups

  • Sugar -3/4 - 1 cup

  • Whipped cream- 1/2 cup

  • Almonds - 8-10

Instructions:

  • Bring half cup of water and sugar to boil. Wait until sugar is completely dissolved. Dunk the lychee pieces and boil for another 4 minutes and set aside .

  • Wash the Basmati rice and soak it for one and a half hour. Then make a coarse paste of it with water.

  • In a heavy bottom pan, take the ground rice and milk and cook until the rice is soft.

  • Add whipped cream and bring it to a boil. Take off from the flame and add sugar syrup-lychee mix and give a good stir.

  • Garnish with almond slivers.
