Indian style Christmas Pudding Recipe

What's a good, hearty Christmas dinner without a flaming hot, melt-in-the-mouth Christmas pudding? You don;t really need to hop into a five-star hotel to indulge your sweet tooth to the gooey goodness of a delectable pudding doused in brandy and set alight. We bring you a simple, easy, quick to making Christmas pudding recipe that is as Indian and delectable as any Christmas pudding can be. Ripe with flavors and nuts, this one's sure to wow your guests. Ingredients
•Refined flour (maida)3/4 cup
•Salt a pinch
•Bread crumbs 3/4 cup
•Butter 4 tablespoons
•Cinnamon powder 1/2 teaspoon
•Nutmeg powder 1/2 teaspoon
•Mace powder 1/2 teaspoon
•Lemon rind 1/2 teaspoon
•Brown sugar 1/2 cup
•Raisins 1/2 cup
•Sultanas 1/2 cup
•Cherries 1/4 cup
•Candied lemon peel,finely chopped 1/4 cup
•Almonds,blanched, peeled and chopped 1/4 cup
•Carrot,peeled & finely chopped 1/2 cup
•Eggs,beaten 3
•Orange juice 1/2 cup
•Sherry 2 tablespoons
•Rum,optional 2 tablespoons


Method

Sieve flour and salt together. Mix in breadcrumbs with the flour. Rub in butter into the flour and breadcrumb mixture.

Add spice powders, lemon rind, sugar, dried fruits, candied peels and nuts.

Add carrot, lightly beaten eggs and orange juice.

Add sherry, rum and leave it covered overnight.

Next day transfer the batter into two moulds, cover with greaseproof paper and foil and then steam in a double boiler continuously for seven hours at a steady temperature. When done cover and keep it overnight in a cool place. Reheat for atleast two hours before serving.

Before serving, pour some brandy and set it alight.
