What can be a better, healthier, tastier way to bring on the summer than chugging down a glassful of chilled almond goodness. Toady we bring you the recipe of almond sherbet. Note the recipe and treat yourself, family and friends to a glassfull of almond delight whenever, wherever.
Ingredients
120 gm almonds-soaked overnight and peeled
8 green cardamoms -crushed, cooked in water and strained
1 tsp almond essence
3 cups sugar
2 cups water
1 tsp kewra essence
1/8 tsp potassium meta bi-sulphite
Instructions

Blend the almonds into a fine paste.

Strain through a sieve or soft muslin and keep the liquid aside.

Add sugar to the almond liquid and cook over low heat.

Once the sugar dissolves, crank up the the heat and bring the mixture to a boil. Skim off the scum as it cooks.

Cook till the mixture is sticky and of a thread-like consistency.

Add the cardamom extract and the kewra essence and mix well.

Once again, strain the mixture through a muslin cloth and allow it to cool completely.

Once the mixture is of room temperature, add some potassium into the syrup and mix.

Store the mixture in airtight jars.
