Almond Sherbet

What can be a better, healthier, tastier way to bring on the summer than chugging down a glassful of chilled almond goodness. Toady we bring you the recipe of almond sherbet. Note the recipe and treat yourself, family and friends to a glassfull of almond delight whenever, wherever.

Ingredients

120 gm almonds-soaked overnight and peeled

8 green cardamoms -crushed, cooked in water and strained

1 tsp almond essence

3 cups sugar

2 cups water

1 tsp kewra essence

1/8 tsp potassium meta bi-sulphite

Instructions

  • Blend the almonds into a fine paste.

  • Strain through a sieve or soft muslin and keep the liquid aside.

  • Add sugar to the almond liquid and cook over low heat.

  • Once the sugar dissolves, crank up the the heat and bring the mixture to a boil. Skim off the scum as it cooks.

  • Cook till the mixture is sticky and of a thread-like consistency.

  • Add the cardamom extract and the kewra essence and mix well.

  • Once again, strain the mixture through a muslin cloth and allow it to cool completely.

  • Once the mixture is of room temperature, add some potassium into the syrup and mix.

  • Store the mixture in airtight jars.
