Red Velvet Cupcakes

Ingredients

2 1/2 cups all purpose flour, sifted
2 tbsp unsweetened cocoa powder
1 tsp salt
1 1/2 cups sugar
1 1/2 cups vegetable oil
2 large eggs
1/2 tsp red gel-paste food color
1 tsp vanilla extract
1 cup buttermilk
1 1/2 tsp baking soda
2 tsp distilled white vinegar
Cream Cheese Frosting

Instructions

Preheat oven to 350 degrees.
Line muffin tins with paper liners.
In a pan, whisk together all purpose flour, cocoa, and salt.
Using an electric mixer, blend sugar and oil until frothy. Crack in the eggs, one at a time, and blend again. Add few drops of food color and vanilla.
Now add the flour mixture in three different batches, alternating with buttermilk. Whisk well.
Whisk together baking soda and vinegar until foamy and add the mixture to the batter. Mix well.
Pour the batter evenly among lined cups, filling up to three fourth.
Bake them, rotating tins halfway through, until done, for about 20 minutes. Transfer tins to wire racks and allow the cupcakes to cool.
Top off with frosting and surprise him/her!
